Bergheim Country Fair Soup
Finely cut-up day-old pretzels, along with finely cut beef covered in a hearty beef broth shortly before serving and then garnished with chives. Onion Soup
Ingredients: 100 g onion, 1l water, 3 biggish potatoes, a little fat and flour, salt, pepper, vinegar.
Directions: Finely dice onion, sauté in the fat until clear, dust with flour and then pour in water. Bring to a good boil, add salt, pepper, vinegar and the peeled, diced potatoes, cooking slowly until soft.
Hungarian Goulash Soup
Ingredients: 150g pork, 100g beef, 2 onions, 1 small carrot, 1 green pepper, 1 can of peeled tomatoes, salt, paprika powder, pepper, garlic, 1 tablespoon of butter, ½ cup of cream.
Directions: Cut meat into small cubes, onions into rings, carrots into slices, the pepper into very fine strips, tomatoes into small pieces (retain liquid).
Sauté onion rings, add meat - brown, finally adding the carrots and strips of pepper. Add tomatoes and tomato liquid, salt, paprika, pepper, garlic – plus ½ l water. Put lid on pot, allowing to cook slowly for about 1 hour. Finally, blend the cream into the soup.
Zucchini Soup
Ingredients: 500 g zucchini, 2 small onions, butter, 1/2l bouillon, salt, pepper, 1 spoon oregano, 1 beaker of crème fraiche.
Directions: Cut zucchini into small cubes; sauté diced onions in butter until clear, briefly add the cubed zucchini. Pour bouillon over the top, season with salt, pepper and oregano, allow to boil for 10 min. Puree everything. Fold in the crème fraiche and bring briefly back to a boil. Garnish with parsley and parmesan, then serve. Ramson Soup for 4 people
Ingredients: 300 g ramson, 1 small potato, ½ l whipping cream, salt
Directions: Boil and peel the potato. wash the ramson and cut into fine noodles. Boil up beef broth with the whipping cream. Add the ramson and boiled potato, then puree. Season to taste with salt. Add deep-fried potato cubes or toasted white bread.
